These cookies are almost healthy enough to eat for breakfast... not saying that "almost" ever stops me! :)
Peanut Butter Oatmeal Chocolate Chip Cookies
1 C natural peanut butter
2 eggs
1/2 C brown sugar
1 t vanilla
2/3 C GF oats
1 t baking soda
2/3 C Enjoy Life dark chocolate chips
Preheat the oven to 350. Throw some parchment paper on a cookie sheet. Mix the peanut butter, eggs, sugar, and vanilla in a large bowl until smooth. In a small bowl stir the baking soda into the oats. Add the oat mix and the chips to the peanut butter mix and stir until well incorporated. Use a cookie scoop to place the dough on your prepared cookie sheet leaving a couple inches between cookies. Bake for about 10 minutes. Don't over bake them, you want them to stay a bit chewy!
