Oatmeal and Almond Blueberry Flax Muffins

When it's cold I bake!  I wanted to make something fabulous and full of antioxidants and omegas!

 

Oatmeal and Almond Blueberry Flax Muffins

1/2 C rolled oats- make sure they are certified gf!
1/2 C buttermilk- squeeze half a lemon in your measuring cup, fill it with Almond milk until you have 1/2 C
1 egg
1/3 C coconut sugar
1/2 t vanilla
1/2 C GF all purpose flour
1 T Almond flour
1 T Flax seed meal
1/2 t baking soda
1/2 t baking powder
1/4 t sea salt
1 C fresh blueberries

Mix the buttermilk up and add the oats.  Let sit and mingle while you get everything else ready.  Preheat oven to 375.  Prepare your muffin pan with coconut oil or liners.  In a large bowl whisk together the flour, Almond flour, Flax, baking soda, baking powder, and salt.  Mix the egg, vanilla, and sugar in with the oat mixture.  Pour into the dry mix and stir until combined.  Put a little batter in each muffin tin (so the blueberries don't get yucky on the bottom).  Fold the blueberries into the remaining batter.  Fill the muffin tins til about 2/3 full.  Bake for about 15 minutes.
